Description
These air fryer zucchini recipes are crispy, flavorful, and ready in minutes. A healthy twist on classic fries, they deliver all the crunch and comfort with minimal oil and maximum flavor.
Ingredients
- 2 medium zucchinis (cut into ¼-inch sticks)
- 1 tablespoon olive oil
- ½ cup breadcrumbs
- ¼ cup grated Parmesan cheese
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- Optional: pinch of smoked paprika or crushed red pepper
- Cooking spray
Instructions
1. Preheat the air fryer to 400°F (200°C).
2. Slice the zucchinis evenly into sticks or rounds about ¼ inch thick.
3. Sprinkle zucchini slices with salt and let them sit for 10 minutes to release moisture. Pat dry thoroughly with paper towels.
4. In a bowl, mix breadcrumbs, Parmesan, garlic powder, and pepper.
5. Toss zucchini slices lightly with olive oil, then coat evenly in the breadcrumb mixture.
6. Arrange in a single layer in the air fryer basket and spray lightly with cooking spray.
7. Cook for 8–10 minutes, flipping halfway through until golden and crispy.
8. Serve immediately with garlic aioli, marinara, or your favorite dipping sauce.
Notes
Avoid overcrowding the air fryer basket to maintain crispiness.
Adjust seasoning to taste—Italian herbs, lemon zest, or Cajun spice work beautifully.
To reheat leftovers, air fry for 3 minutes at 380°F for restored crunch.
