Description
Asian Carrot & Cucumber Salad with crisp vegetables and sesame soy dressing.
Ingredients
2 Persian cucumbers
1 cup shredded carrots
1/2 tsp salt
2 tbsp rice vinegar
1 tbsp soy sauce
1 tsp sesame oil
1 tsp honey
1 garlic clove
1/2 tsp ginger
1 tsp sesame seeds
1 tbsp green onions
Instructions
1. Slice cucumbers.
2. Add carrots and salt.
3. Rest 10 minutes.
4. Drain and pat dry.
5. Whisk dressing.
6. Toss vegetables with dressing.
7. Top with sesame seeds and green onions.
Notes
Salt vegetables first to avoid soggy salad.
Serve chilled.
