Description

Avocado Corn Pasta Salad is a fresh and vibrant dish made with creamy avocado, sweet corn, and bright lime dressing.


Ingredients

12 ounces rotini pasta

1 1/2 cups sweet corn

2 ripe avocados, diced

1 cup cherry tomatoes, halved

1/4 cup red onion, diced

2 tablespoons fresh cilantro

1/4 cup olive oil

2 tablespoons lime juice

1 teaspoon lime zest

1/2 teaspoon salt

1/4 teaspoon black pepper


Instructions

1. Cook pasta until al dente and rinse under cold water.

2. Combine pasta with corn, tomatoes, onion, and cilantro.

3. Whisk olive oil, lime juice, lime zest, salt, and pepper.

4. Toss dressing with pasta mixture.

5. Fold in avocado before serving.

6. Chill 30 minutes if desired.

Notes

Add avocado just before serving.

Store up to 2 days refrigerated.

Add black beans for extra protein.
