Description

Baked Parmesan Crusted Zucchini that turns crispy and golden with bold cheesy flavor.


Ingredients

Scale

3 medium zucchini, sliced into rounds

1/2 cup grated Parmesan cheese

1/2 cup Italian-style breadcrumbs

1 teaspoon garlic powder

1/2 teaspoon salt

1/2 teaspoon black pepper

2 large eggs

Olive oil spray


Instructions

1. Preheat oven to 425ยฐF and line baking sheet.

2. Whisk eggs in bowl.

3. Combine Parmesan, breadcrumbs, and seasonings.

4. Dip zucchini in egg then coat in mixture.

5. Place on baking sheet.

6. Spray lightly with oil.

7. Bake 20-25 minutes until golden and crispy.

Notes

Bake in single layer.

Use panko for extra crunch.

Reheat in oven to keep crisp.
