Description
This moist banana bread recipe uses melted butter for incredible flavor and a soft, moist crumb that stays fresh for days. You only need one bowl and simple ingredients for bakery-quality banana bread at home.
Ingredients
2 to 3 medium (7″ to 7-7/8″ long) very ripe bananas, peeled (about 1 1/4 to 1 1/2 cups mashed)
1/3 cup (76g) butter, unsalted or salted, melted
1/2 teaspoon baking soda (not baking powder)
1 pinch salt
3/4 cup (150g) sugar (1/2 cup if you would like it less sweet, 1 cup if more sweet)
1 large egg, beaten
1 teaspoon vanilla extract
1 1/2 cups (205g) all-purpose flour
Instructions
1. Preheat oven to 350°F (175°C).
2. Butter an 8×4-inch loaf pan.
3. Mash the ripe bananas in a bowl until smooth.
4. Stir in the melted butter until well combined.
5. Add the sugar, beaten egg, and vanilla extract; mix until blended.
6. Sprinkle in the baking soda and salt, then gently stir in the flour until just combined.
7. Pour the batter into the prepared loaf pan.
8. Bake for 55 to 65 minutes, or until a toothpick inserted into the center comes out mostly clean.
9. Cool in the pan for 10 minutes, then remove and let cool completely before slicing.
Notes
For extra flavor, fold in 1/2 cup of chopped nuts, mini chocolate chips, or fresh blueberries before baking.
Wrap and store at room temperature for 4 days, refrigerate for up to a week, or freeze slices for up to 3 months.
