Description
BBQ Chicken and Sweet Potatoes Sheet Pan that roasts smoky and tender in one pan.
Ingredients
4 boneless skinless chicken breasts
2 large sweet potatoes, cubed
1 red onion, sliced
3/4 cup BBQ sauce
3 tablespoons olive oil
1 teaspoon smoked paprika
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 425ยฐF and line sheet pan.
2. Toss sweet potatoes and onion with oil and seasonings.
3. Spread on pan.
4. Place chicken on pan and brush with BBQ sauce.
5. Roast 20 minutes.
6. Brush with more sauce and roast 10 minutes until done.
7. Serve warm.
Notes
Do not overbake chicken.
Roast in single layer.
Store leftovers up to 4 days.
