Blueberry Pecan Chicken Salad is a sweet and savory lunch recipe with juicy blueberries and crunchy pecans.
Ingredients
3 cups cooked chicken breast shredded
1 cup fresh blueberries
1/2 cup chopped pecans toasted
1/2 cup celery finely chopped
1/4 cup red onion diced
1/2 cup mayonnaise
2 tablespoons plain Greek yogurt
1 tablespoon fresh lemon juice
1 tablespoon honey
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Add shredded chicken to bowl
2. Stir in blueberries pecans celery and red onion
3. Whisk mayonnaise yogurt lemon juice honey salt and pepper
4. Pour dressing over mixture
5. Fold gently until coated
6. Chill 30 minutes
7. Serve cold
