A hearty breakfast burrito recipe with eggs, cheese, potatoes, and your choice of meat or veggies. Easy to customize and perfect for busy mornings.
Ingredients
- 4 large flour tortillas
- 6 large eggs
- 1 cup diced potatoes or hash browns
- 1 cup shredded cheese (cheddar or Monterey Jack)
- ½ cup cooked bacon, sausage, or chorizo (optional)
- ½ cup bell peppers or onions (optional)
- 2 tbsp oil or butter for cooking
- Salt and pepper, to taste
- Salsa or hot sauce, for serving
Instructions
1. Cook potatoes in oil until golden and crispy. Set aside.
2. Scramble eggs gently until soft and fluffy.
3. Cook sausage, bacon, or chorizo if using.
4. Warm tortillas in a dry skillet until pliable.
5. Layer cheese, eggs, potatoes, and fillings onto each tortilla.
6. Roll tightly, folding in the sides first.
7. Serve immediately with salsa, or wrap and freeze for later.
Notes
Best served warm.
To freeze, wrap tightly in foil and store for up to 2 months.
Reheat in the oven or microwave until heated through.
