Smokey, halal-friendly chicken baked in foil packets over a campfire. Balanced sweetness and spice, with tender, juicy results from indirect heat and thick BBQ sauce. No special tools needed.
Ingredients
4 bone-in chicken thighs or breasts (skin-on, halal-friendly)
2 cups non-alcoholic BBQ sauce (homemade or store-bought)
2 large heavy-duty aluminum foil sheets
1 tsp garlic powder (or 2 cloves minced garlic)
2 tbsp olive oil (or avocado oil for high heat)
Instructions
Pound chicken breasts to ½-inch thickness if using
Brush both sides with olive oil and sprinkle garlic powder
Generously spread BBQ sauce over chicken and let marinate 30 minutes
Place chicken on foil sheets, add more sauce, and seal tightly
Cook 6-10 inches above moderate flames, rotating every 10 minutes
Check internal temperature (165°F) with a campfire-safe thermometer

Preheat embers to 325°F for even cooking
Double-wrap foil for longer cooks
Reserve sauce to baste final 10 minutes for caramelization
