Description
Caprese Chicken with Balsamic Glaze that is juicy, fresh, and full of flavor.
Ingredients
4 boneless skinless chicken breasts
2 tablespoons olive oil
2 cloves garlic, minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon Italian seasoning
1 cup cherry tomatoes, halved
8 ounces fresh mozzarella, sliced
1/4 cup fresh basil leaves
1/4 cup balsamic glaze
Instructions
1. Heat olive oil in skillet.
2. Season chicken and cook until done.
3. Add garlic during last minute.
4. Top with mozzarella and tomatoes.
5. Cover and melt cheese.
6. Drizzle balsamic glaze.
7. Garnish with basil and serve.
Notes
Use thermometer to check 165°F internal temp.
Bake instead of sear if preferred.
Store leftovers up to 4 days.
