Description
Creamy cheesy pesto tortellini with basil and Parmesan.
Ingredients
1 (9 oz) package cheese tortellini
½ cup prepared basil pesto
¼ cup heavy cream
¼ cup grated Parmesan cheese
1 tbsp olive oil
Salt and pepper to taste
Optional: cherry tomatoes, spinach, grilled chicken
Instructions
1. Boil salted water and cook tortellini for 3–4 minutes until floating.
2. In a skillet, heat olive oil, then add pesto and cream.
3. Drain tortellini and toss in pesto sauce.
4. Add Parmesan and stir until creamy.
5. Serve warm with fresh basil.
Notes
Tortellini is done when it floats.
Avoid overheating pesto.
Add spinach or mushrooms for extra texture.
