Description

Cheesy Zucchini Casserole that bakes tender and creamy with a golden cheesy topping.


Ingredients

Scale

4 medium zucchini, sliced

1 cup shredded cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 cup sour cream

1/4 cup grated Parmesan cheese

1 large egg

1/2 small onion, diced

1 clove garlic, minced

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil


Instructions

1. Preheat oven to 375ยฐF and grease baking dish.

2. Cook onion and garlic.

3. Add zucchini and sautรฉ briefly.

4. Whisk egg and sour cream.

5. Stir in cheeses and seasonings.

6. Fold in zucchini mixture.

7. Spread into dish.

8. Bake 30-35 minutes until golden.

9. Rest before serving.

Notes

Sautรฉ zucchini to reduce moisture.

Let casserole rest before slicing.
