Description
These chicken caprese bites recipes are the perfect finger food juicy marinated chicken, sweet cherry tomatoes, fresh basil, and creamy mozzarella, all tied together with a rich balsamic glaze. Ideal for parties, lunches, or quick weeknight appetizers.
Ingredients
1 lb boneless skinless chicken breast, cut into 1-inch cubes
1 cup cherry tomatoes
1 cup mozzarella balls (ciliegine or cubed)
Fresh basil leaves
1/4 cup balsamic glaze
2 tablespoons olive oil
2 tablespoons balsamic vinegar
1 teaspoon garlic powder or 2 cloves minced garlic
1 teaspoon Italian seasoning
Salt and pepper to taste
Toothpicks or small skewers
Instructions
1. In a medium bowl, mix olive oil, balsamic vinegar, garlic, Italian seasoning, salt, and pepper.
2. Add chicken cubes to the marinade, cover, and refrigerate for at least 30 minutes (or up to 4 hours).
3. Preheat oven to 400°F or heat grill to medium heat.
4. Thread chicken, tomato, mozzarella, and basil onto toothpicks or skewers.
5. Arrange on a lined baking sheet or grill directly.
6. Roast for 15–18 minutes, turning once halfway through. For grill, cook 6–8 minutes.
7. In final minutes, brush or drizzle with balsamic glaze.
8. Remove and let cool slightly before serving.
Notes
You can prep the skewers ahead of time and refrigerate until ready to cook.
To serve cold, cook bites ahead and chill. Add glaze right before serving.
Double the marinade and use half for brushing during cooking.
