Easy Chicken Fajita Rice Bowls with juicy chicken, colorful peppers, and fluffy rice.
Ingredients
1 lb chicken breasts, sliced
1 red bell pepper
1 yellow bell pepper
1 onion
2 tbsp olive oil
1 cup rice (cooked)
1 tsp chili powder
½ tsp cumin
½ tsp paprika
½ tsp garlic powder
Salt & pepper to taste
Lime wedges, cilantro
Instructions
1. Heat olive oil in a skillet.
2. Add seasoned chicken and cook until golden.
3. Add peppers and onions; sauté until tender.
4. Serve over rice.
5. Top with lime juice and cilantro.
Notes
Swap chicken for shrimp or add black beans for variety.
