Description

This chicken noodle soup homemade broth recipe starts with a from-scratch broth simmered with chicken, vegetables, and herbs for deep, clean flavor.


Ingredients

Scale

1 whole chicken (3โ€“4 lb) or bone-in chicken pieces

10 cups cold water

3 carrots, sliced

3 celery stalks, sliced

1 large onion, halved

3 cloves garlic, smashed

2 bay leaves

1 tsp salt

1/2 tsp black pepper

1 tsp dried thyme

2 cups egg noodles

Optional fresh parsley


Instructions

1. Place chicken in a large pot and cover with cold water.

2. Add onion, garlic, carrots, celery, bay leaves, salt, pepper, and thyme.

3. Bring to a gentle boil, then reduce heat.

4. Simmer uncovered for 45 minutes.

5. Remove chicken and shred the meat.

6. Strain broth and return it to the pot.

7. Add shredded chicken back to the broth.

8. Bring to a light boil.

9. Add noodles and cook until tender.

Notes

Keep the simmer gentle to maintain a clear broth.

Cook noodles separately if planning to freeze the soup.
