Description

This chicken noodle soup homemade rotisserie recipe uses shredded rotisserie chicken, fresh vegetables, and broth for fast, comforting soup.


Ingredients

3 cups shredded rotisserie chicken

8 cups chicken broth

2 carrots, sliced

2 celery stalks, sliced

1 small onion, diced

3 cloves garlic, minced

1 1/2 cups egg noodles

1 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1/2 tsp dried thyme

Optional fresh parsley


Instructions

1. Heat olive oil in a large pot over medium heat.

2. Add onion, carrots, and celery and cook until soft.

3. Stir in garlic and cook briefly.

4. Pour in chicken broth, salt, pepper, and thyme.

5. Bring to a gentle boil.

6. Add egg noodles and cook until tender.

7. Stir in rotisserie chicken.

8. Simmer 5 minutes until heated through.

Notes

Add rotisserie chicken near the end to keep it tender.

Freeze soup without noodles for best texture.
