Ingredients
Chicken breast, 300g
Rice paper sheets, 4 large
Green cabbage, 1 cup shredded
Carrots, 2 medium julienned
Peanut sauce, 1/2 cup
Lettuce, 1 cup shredded (optional)
Radishes, 1/4 cup sliced
Instructions
Grill chicken with soy sauce, garlic, and ginger until fully cooked
Julienne vegetables and store separately
Soak 1 rice paper sheet in water until pliable
Spread 1/4 cup cabbage, 3 carrot slices, and shredded lettuce on half the sheet
Add 1/4 cup chicken and 2 tbsp sauce, fold edges, and roll snugly
Place rolled summer roll in one side of a container
Balance with additional cabbage, carrots, lettuce, radishes, and sauce on the opposite side
Press lid firmly, place rolls seam-down to maintain shape
Notes
Use red cabbage for vibrant color
Substitute tofu for chicken
Daikon radish can replace carrots
Store in airtight containers up to 2 days
Room-temperature chicken works best for assembly
