Description

Classic Creamy Potato Salad is a timeless side dish made with tender potatoes, crisp celery, eggs, and rich creamy dressing.


Ingredients

2 pounds Yukon Gold potatoes, diced

3/4 cup mayonnaise

1 tablespoon yellow mustard

1 tablespoon apple cider vinegar

1/2 cup celery, chopped

1/4 cup red onion, diced

2 hard-boiled eggs, chopped

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon parsley


Instructions

1. Boil diced potatoes 12-15 minutes until fork-tender.

2. Drain and cool slightly.

3. Whisk mayonnaise, mustard, vinegar, salt, and pepper.

4. Combine potatoes with celery, onion, and eggs.

5. Stir in dressing gently.

6. Chill at least 1 hour before serving.

Notes

Store up to 4 days refrigerated.

Add dill or relish for variation.
