Description

Crisp, avocado-enriched deviled eggs with smoky chipotle notes offer a modern twist on a classic appetizer. The creaminess of avocado and richness of yolk create a vibrant, balanced bite perfect for casual gatherings.


Ingredients

1 dozen large hard-boiled eggs (aged)
1/4 cup mayonnaise (swap Greek yogurt for vegan)
1 tsp mustard (Dijon preferred)
1 medium ripe avocado
1 tsp chipotle in adobo (omit for mild version)
1 tbsp pickle relish (non-alcoholic)
Salt and freshly ground black pepper (to taste)


Instructions

Place eggs in a single layer in a saucepan, cover with cold water (1 inch above eggs), and bring to a boil over high heat. Remove from heat, let sit 10 minutes, then transfer to ice water for 5 minutes. Tap and peel under running water.
Scoop yolks into a bowl and mash with a fork. Add mayonnaise, mustard, chopped chipotle, and relish. Blend in mashed avocado until smooth. Season with salt and pepper.
Slice boiled eggs in half, remove yolks, and fill with the yolk mixture. Garnish with paprika or microgreens if desired.

Notes

Use aged eggs for easier peeling.
For vegan version, substitute Greek yogurt for mayonnaise.
Chipotle can be omitted or replaced with smoked paprika for a non-spicy version.
Store in the fridge for up to 24 hours before serving.
