Description
Classic Italian Pasta Salad with Salami is a bold, colorful side dish made with rotini, fresh vegetables, mozzarella, and zesty dressing.
Ingredients
12 ounces rotini pasta
4 ounces salami, sliced
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1 red bell pepper, chopped
1/2 cup red onion, sliced
1/2 cup black olives
1 cup mozzarella pearls
3/4 cup Italian dressing
2 tablespoons parsley
1/4 teaspoon black pepper
Instructions
1. Cook pasta until al dente and rinse under cold water.
2. Combine pasta with salami, vegetables, olives, and mozzarella.
3. Pour dressing over mixture and toss well.
4. Add parsley and pepper.
5. Refrigerate at least 1 hour before serving.
Notes
Store up to 4 days in refrigerator.
Add Parmesan if desired.
Stir before serving.
