Description
Creamy BLT Pasta Salad is a rich and satisfying side dish made with crispy bacon, tender pasta, and fresh vegetables.
Ingredients
12 ounces rotini pasta
8 slices bacon, cooked and crumbled
1 1/2 cups cherry tomatoes
2 cups chopped romaine lettuce
1/2 cup red onion
3/4 cup mayonnaise
2 tablespoons sour cream
1 tablespoon lemon juice
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
1. Cook pasta until al dente and rinse under cold water.
2. Combine pasta with bacon, tomatoes, and onion.
3. Whisk dressing ingredients until smooth.
4. Toss pasta with dressing.
5. Fold in romaine before serving.
6. Chill at least 1 hour before serving.
Notes
Store up to 3 days refrigerated.
Add lettuce right before serving.
Use Greek yogurt to lighten dressing.
