Description
Creamy Cottage Cheese Alfredo Chicken is a high-protein skillet dinner with a rich, lighter Alfredo sauce.
Ingredients
4 boneless skinless chicken breasts
1 1/2 cups cottage cheese
1/2 cup grated Parmesan cheese
1/2 cup chicken broth
3 cloves garlic minced
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon Italian seasoning
Instructions
1. Blend cottage cheese until smooth
2. Heat olive oil in skillet over medium heat
3. Season chicken with salt pepper and Italian seasoning
4. Cook chicken 5 to 6 minutes per side
5. Remove chicken and set aside
6. Cook garlic 30 seconds
7. Add chicken broth and scrape skillet
8. Stir in blended cottage cheese and Parmesan
9. Simmer 3 to 4 minutes
10. Return chicken to skillet and coat with sauce
11. Serve warm

Blend cottage cheese completely smooth
Do not boil sauce
