Description

A hearty, creamy cowboy soup made with beef, beans, and corn in a rich broth.


Ingredients

Scale
  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can corn
  • 1 can pinto beans
  • 1 can diced tomatoes with green chilies
  • 1 can cream of potato soup
  • 1 cup heavy cream
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste

Instructions

1. Brown beef, drain grease.

2. Add onion and garlic; cook until soft.

3. Stir in corn, beans, and tomatoes.

4. Add soup and cream; mix well.

5. Season and simmer 20 minutes.

6. Serve hot with cheese and green onions.

Notes

Customize spice level with jalapeños or hot sauce.
