Description
Buffalo Chicken Stuffed Peppers packed with spicy shredded chicken and melty cheese. A high-protein dinner ready in 35 minutes.
Ingredients
4 bell peppers halved
2 cups shredded chicken
1/3 cup buffalo sauce
1/2 cup Greek yogurt
1/2 cup mozzarella
1/4 cup blue cheese
1/2 tsp garlic powder
1/4 tsp black pepper
2 tbsp green onions
Instructions
1. Preheat oven to 375°F.
2. Place halved peppers in baking dish.
3. Mix chicken, buffalo sauce, yogurt, and seasonings.
4. Stir in half the mozzarella.
5. Fill peppers with mixture.
6. Top with remaining cheese.
7. Bake 18-20 minutes.
8. Garnish and serve.
Notes
Store leftovers up to 4 days.
