Description
Creamy garlic parmesan gnocchi soup is rich, cozy, and simple perfect for quick comfort dinners.
Ingredients
- Butter 2 tbsp
- Olive oil 1 tbsp
- Garlic 4 cloves, minced
- Onion 1 small, diced
- Carrot 1, diced
- Celery 1 stalk, chopped
- Chicken or vegetable broth 4 cups
- Heavy cream 1 cup
- Parmesan cheese 1/2 cup, grated
- Gnocchi 16 oz
- Italian seasoning 1 tsp
- Salt & pepper to taste
- Baby spinach 1 cup optional
Instructions
1. Melt butter and oil in pot.
2. Add garlic, onion, carrot, and celery. Sauté 5 minutes.
3. Pour in broth; bring to boil.
4. Add gnocchi and cook 3–4 minutes until they float.
5. Stir in cream, parmesan, seasoning.
6. Add spinach; simmer 2 minutes.
7. Serve hot with bread.
Notes
Use frozen gnocchi directly in broth.
Add cooked chicken or sausage for extra protein.
Top with extra parmesan.
