Description

Creamy Italian Ground Chicken Soup made with tender ground chicken, herbs, pasta, and a rich creamy broth.


Ingredients

Scale

1 lb ground chicken

1 tbsp olive oil

1 small onion, diced

3 cloves garlic, minced

1 tsp Italian seasoning

½ tsp salt

¼ tsp black pepper

½ tsp red pepper flakes (optional)

4 cups chicken broth

1 cup heavy cream

1 cup small pasta

1 cup spinach

½ cup grated Parmesan


Instructions

1. Heat olive oil in a pot and brown the ground chicken

2. Add onion and garlic and cook until soft

3. Stir in seasonings

4. Pour in chicken broth and bring to a simmer

5. Add pasta and cook until tender

6. Stir in cream and spinach

7. Finish with Parmesan and serve

Notes

Soup thickens as it rests.

Add broth when reheating if needed.
