Ingredients
- 2 tbsp olive oil
- 1 lb chicken breast, cubed
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 tsp Italian seasoning
- ½ tsp chili flakes
- ½ cup sun-dried tomatoes, chopped
- 4 cups chicken broth
- 1 cup heavy cream
- ½ cup Parmesan cheese
- 2 cups baby spinach
- Salt and pepper to taste
Instructions
1. Heat oil and cook chicken until golden.
2. Remove chicken; sauté onion and garlic.
3. Add sun-dried tomatoes and seasoning.
4. Pour broth and simmer 15 minutes.
5. Add chicken, cream, and cheese; stir well.
6. Mix in spinach until wilted.
7. Serve warm.
