- 2 tbsp butter
- 1 tbsp olive oil
- 1 small onion, chopped
- 3 garlic cloves, minced
- 2 cups spinach
- 1 cup artichoke hearts
- 3 cups broth
- 1 cup heavy cream
- ½ cup Parmesan
- Salt and pepper to taste
Instructions
1. Melt butter and olive oil in a pot.
2. Add onion and cook until soft.
3. Add garlic, spinach, and artichokes.
4. Pour in broth and simmer for 10 minutes.
5. Add cream and cheese.
6. Blend or leave chunky.
7. Season and serve hot.
Notes
Add chicken or white beans for extra protein. Use coconut cream for dairy-free.
