Description
Creamy Spinach Mushroom Orzo combines tender pasta, sautéed mushrooms, and fresh spinach in a rich garlic cream sauce.
Ingredients
1 tbsp olive oil
1 tbsp butter
1 cup orzo
2 cups mushrooms, sliced
2 cloves garlic, minced
2 cups spinach
2 cups vegetable broth
1 cup milk or light cream
1/4 cup Parmesan
Salt and pepper to taste
Instructions
1. Heat oil and butter in skillet.
2. Add mushrooms; sauté until golden.
3. Stir in garlic and orzo; toast 1 minute.
4. Add broth and milk; simmer 10–12 minutes.
5. Stir in spinach and cheese; season and serve.
Notes
Add white wine for extra flavor.
Use kale instead of spinach for variation.
