Description
Creamy Tuscan Chicken combines juicy chicken breasts, sun-dried tomatoes, spinach, and garlic cream sauce in one easy skillet meal.
Ingredients
4 boneless, skinless chicken breasts
1 tbsp olive oil
2 tbsp butter
3 cloves garlic, minced
½ cup sun-dried tomatoes, chopped
1 ½ cups heavy cream
½ cup Parmesan cheese
1 tsp Italian seasoning
2 cups spinach
Salt & pepper
Instructions
1. Season chicken with salt and pepper.
2. Sear in olive oil and butter until golden; remove.
3. Sauté garlic and sun-dried tomatoes.
4. Add cream and Parmesan; simmer.
5. Add spinach until wilted.
6. Return chicken; coat with sauce and simmer 3 minutes.
Notes
Use half-and-half for lighter sauce.
Add mushrooms for extra flavor.
Store up to 3 days refrigerated.
