Description

Creamy Tuscan Chicken with Spinach features tender chicken in a rich garlic cream sauce with sun-dried tomatoes.


Ingredients

Scale

4 boneless skinless chicken breasts

2 tbsp olive oil

1/2 tsp salt

1/2 tsp black pepper

1 tsp Italian seasoning

3 garlic cloves minced

1/2 cup sun-dried tomatoes sliced

1 cup chicken broth

1 cup heavy cream

1/2 cup Parmesan cheese grated

2 cups fresh spinach


Instructions

1. Season chicken with salt pepper and Italian seasoning

2. Heat oil in skillet over medium heat

3. Sear chicken 5-6 minutes per side

4. Remove chicken and set aside

5. Add garlic and sun-dried tomatoes

6. Add broth and scrape pan

7. Stir in cream and Parmesan

8. Add spinach and cook until wilted

9. Return chicken and simmer 5 minutes

Notes

Use chicken thighs if preferred

Simmer uncovered to thicken

Add mushrooms for variation
