Creamy Zucchini and Mushroom Pasta that is rich, comforting, and easy to prepare.
Ingredients
12 ounces pasta
2 medium zucchini, sliced
8 ounces mushrooms, sliced
2 tablespoons butter
2 cloves garlic, minced
1 cup heavy cream
3/4 cup grated Parmesan cheese
1/2 teaspoon salt
1/2 teaspoon black pepper
1 tablespoon olive oil
Instructions
1. Cook pasta and reserve pasta water.
2. Heat oil and butter in skillet.
3. Cook mushrooms until browned.
4. Add zucchini and cook until tender.
5. Stir in garlic.
6. Add cream and simmer.
7. Stir in Parmesan and seasonings.
8. Toss with pasta and add pasta water if needed.
9. Serve warm.
Notes
Serve immediately for best texture.
Store leftovers up to 3 days.
Reheat gently on stovetop.
