Description

Crockpot Hawaiian Chicken with Pineapple is sweet, savory, and tender with minimal prep.


Ingredients

Scale

2 lbs boneless skinless chicken breasts

1 cup pineapple juice

1 cup pineapple chunks

1/2 cup soy sauce

1/3 cup brown sugar

2 garlic cloves minced

1 tsp grated ginger

2 tbsp ketchup

1 tbsp cornstarch

2 tbsp water


Instructions

1. Place chicken in slow cooker

2. Whisk pineapple juice soy sauce brown sugar garlic ginger and ketchup

3. Pour over chicken

4. Cook on LOW 4-6 hours

5. Shred chicken

6. Return chicken to slow cooker

7. Add cornstarch slurry if desired

8. Warm pineapple chunks and serve over rice

Notes

Use chicken thighs if preferred

Add bell peppers for variation

Cook uncovered to thicken sauce
