Description

Creamy slow cooker Tuscan chicken with sun-dried tomatoes and spinach. Easy comfort food dinner.


Ingredients

Scale

4 boneless skinless chicken breasts

1 cup heavy cream

1/2 cup chicken broth

1/2 cup grated Parmesan cheese

1/2 cup sun-dried tomatoes drained

3 cloves garlic minced

1 teaspoon Italian seasoning

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup fresh spinach


Instructions

1. Place chicken in crockpot

2. Whisk cream, broth, Parmesan, garlic, seasoning, salt, and pepper

3. Pour sauce over chicken

4. Add sun-dried tomatoes

5. Cover and cook on LOW for 240 minutes

6. Stir in spinach during the last 15 minutes

7. Serve warm with sauce spooned over top

Notes

Use thawed chicken for best texture

Store leftovers up to 3 days
