Description
Curry Soup with Chickpeas is a creamy, coconut-based soup filled with warm curry spices and protein-rich chickpeas.
Ingredients
2 tbsp olive oil
1 onion, diced
3 garlic cloves, minced
1 tbsp grated ginger
2 tbsp curry powder
1 tsp ground cumin
1 can coconut milk
3 cups vegetable broth
1 can chickpeas, drained
1 cup diced tomatoes
2 cups baby spinach
Juice of 1/2 lemon
Salt and pepper to taste
Fresh cilantro for garnish
Instructions
1. Heat olive oil; sauté onion, garlic, and ginger for 3–4 minutes.
2. Add curry powder and cumin; cook 1 minute.
3. Pour in coconut milk, broth, tomatoes, and chickpeas.
4. Simmer for 15 minutes.
5. Stir in spinach and lemon juice; season and serve.
