Description

This easy lasagna soup captures all the rich, cheesy, and comforting flavors of classic lasagna—without the layers or the oven. Perfect for weeknights!


Ingredients

1 lb ground beef or Italian sausage

1 small onion, diced

3 garlic cloves, minced

1 tbsp tomato paste

1 can (28 oz) crushed tomatoes

4 cups beef or chicken broth

1 tsp dried oregano

1 tsp dried basil

½ tsp salt

½ tsp black pepper

6 lasagna noodles, broken into pieces

¾ cup ricotta cheese

1 cup shredded mozzarella

¼ cup grated Parmesan

Fresh basil, for garnish


Instructions

1. In a large pot, brown the meat over medium heat. Drain excess fat.

2. Add onion and garlic; cook 2–3 minutes until softened.

3. Stir in tomato paste, crushed tomatoes, broth, oregano, basil, salt, and pepper.

4. Bring to a boil, then add broken lasagna noodles.

5. Simmer for 15–20 minutes, until noodles are tender.

6. Stir in ricotta, mozzarella, and Parmesan just before serving.

7. Garnish with fresh basil and extra cheese if desired.

Notes

For a lighter version, use ground turkey and low-sodium broth.

Cook pasta separately if making ahead to avoid soggy noodles.

Freeze soup base without noodles; add fresh pasta when reheating.
