Egg Drop Soup is a Chinese-inspired comfort dish with silky egg ribbons in savory broth, ready in just 15 minutes.
Ingredients
4 cups chicken or vegetable broth
2 large eggs, beaten
1 tbsp cornstarch + 2 tbsp water (optional)
1 tbsp soy sauce
½ tsp sesame oil
½ tsp grated ginger
2 green onions, sliced
Salt and white pepper to taste
Instructions
1. Bring broth, soy sauce, ginger, and sesame oil to a simmer.
2. Add cornstarch slurry and cook for 1–2 minutes.
3. Reduce heat to low; drizzle eggs slowly into broth while stirring gently.
4. Remove from heat and season with salt and pepper.
5. Garnish with sliced green onions.
