Description
Garlic Butter Shrimp and Zucchini Skillet is a quick one-pan dinner with tender shrimp and fresh zucchini.
Ingredients
1 pound large shrimp peeled and deveined
2 medium zucchini sliced
3 tablespoons butter
4 cloves garlic minced
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 tablespoon lemon juice
1 tablespoon fresh parsley chopped
Instructions
1. Pat shrimp dry
2. Melt butter in skillet over medium heat
3. Add garlic and cook 30 seconds
4. Add zucchini and sautรฉ 3 to 4 minutes
5. Push zucchini aside and add shrimp
6. Season with salt pepper and paprika
7. Cook shrimp 2 to 3 minutes per side
8. Stir together and drizzle with lemon juice
9. Garnish with parsley and serve immediately
Notes
Do not overcook shrimp
Store leftovers up to 3 days
