Description

German Potato Salad (No Bacon) is a warm and tangy side dish made with tender potatoes and bold vinegar mustard dressing.


Ingredients

2 pounds Yukon Gold potatoes, sliced

1 small yellow onion, diced

1/4 cup apple cider vinegar

2 tablespoons Dijon mustard

1 tablespoon whole grain mustard (optional)

1/4 cup olive oil

3/4 cup vegetable broth

1 teaspoon sugar

3/4 teaspoon salt

1/2 teaspoon black pepper

2 tablespoons parsley


Instructions

1. Boil sliced potatoes 12-15 minutes until fork-tender.

2. Drain potatoes well.

3. Sautรฉ onion in olive oil until softened.

4. Stir in broth, vinegar, mustard, sugar, salt, and pepper and simmer.

5. Pour hot dressing over warm potatoes and toss gently.

6. Garnish with parsley and serve warm.

Notes

Serve warm for best flavor.

Store up to 4 days refrigerated.

Reheat gently before serving.
