Ingredients

3/4 cup brown sugar

2/3 cup molasses

1 large egg

1 1/2 tsp ground ginger

1 tsp cinnamon

1/2 tsp cloves

1/4 tsp allspice

1/2 tsp salt

1 tsp baking soda


Instructions

1. Cream butter and brown sugar until smooth.

2. Add molasses and egg, mix well.

3. Whisk flour, baking soda, and spices separately.

4. Combine dry and wet ingredients; form dough.

5. Wrap dough discs, chill for at least 3 hours.

6. Roll out to 1/4 inch; cut shapes.

7. Bake at 350°F for 9–11 minutes.

8. Cool completely before decorating.

Notes

Chilling the dough is essential for shape retention.

Cookies freeze well up to 3 months.

Use royal icing or buttercream for decorating.
