Description

Greek Pasta Salad with Feta and Olives is a fresh Mediterranean side dish made with tender pasta, crisp vegetables, and tangy lemon dressing.


Ingredients

12 ounces rotini or penne pasta

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red onion, sliced

1/2 cup Kalamata olives

1 cup feta cheese, crumbled

1/4 cup olive oil

2 tablespoons lemon juice

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 tablespoons parsley


Instructions

1. Cook pasta until al dente and rinse under cold water.

2. Combine pasta with tomatoes, cucumber, onion, olives, and feta.

3. Whisk olive oil, lemon juice, oregano, salt, and pepper.

4. Pour dressing over salad and toss gently.

5. Refrigerate at least 1 hour before serving.

Notes

Store up to 4 days refrigerated.

Add grilled chicken for extra protein.
