Grilled Shrimp Tacos with Mango Salsa are fresh, zesty, and ready in just 30 minutes.
Ingredients
1 1/2 lbs large shrimp peeled and deveined
2 tbsp olive oil
Juice of 1 lime
1 tsp chili powder
1/2 tsp smoked paprika
1/2 tsp garlic powder
1/2 tsp salt
1/4 tsp black pepper
1 ripe mango diced
1/4 cup red onion chopped
2 tbsp cilantro chopped
Juice of 1/2 lime
8 small tortillas
Shredded cabbage
Avocado slices
Instructions
1. Preheat grill to medium high
2. Toss shrimp with oil lime and spices
3. Thread shrimp onto skewers
4. Grill 2-3 minutes per side
5. Mix mango onion cilantro and lime juice
6. Warm tortillas
7. Assemble tacos with shrimp and salsa
8. Serve with lime wedges
Notes
Do not overcook shrimp
Add jalapeno for spice
Use grill pan if needed
