Description
High Protein Mediterranean Sheet Pan Chicken that roasts juicy with bold herbs and fresh vegetables.
Ingredients
4 boneless skinless chicken breasts
1 pint cherry tomatoes
1 medium zucchini, sliced
1 red onion, sliced
1/2 cup Kalamata olives
3 tablespoons olive oil
Juice of 1 lemon
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon paprika
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 cup crumbled feta cheese
Instructions
1. Preheat oven to 425ยฐF and line sheet pan.
2. Whisk oil, lemon, garlic, and seasonings.
3. Place chicken on pan and brush with marinade.
4. Add vegetables and olives and toss in marinade.
5. Spread in single layer.
6. Roast 25 minutes until cooked through.
7. Sprinkle feta and garnish before serving.
Notes
Use thermometer to check 165ยฐF internal temp.
Store leftovers up to 4 days.
Serve over grains for balanced meal.
