Ingredients
4 boneless skinless chicken breasts
3 cups broccoli florets
2 cups baby potatoes halved
1 cup carrots sliced
3 tablespoons honey
4 cloves garlic minced
3 tablespoons low sodium soy sauce
2 tablespoons olive oil
1 tablespoon Dijon mustard
1/2 teaspoon salt
1/2 teaspoon black pepper
Instructions
1. Preheat oven to 400ยฐF and line a sheet pan with parchment paper.
2. Whisk honey garlic soy sauce olive oil and Dijon mustard in a bowl.
3. Arrange chicken and vegetables on the pan.
4. Pour sauce over everything and toss vegetables to coat.
5. Bake 25 to 30 minutes until chicken reaches 165ยฐF.
6. Broil 2 to 3 minutes for caramelized edges if desired.
Notes
Cut vegetables evenly for even cooking.
Marinate chicken up to 24 hours for deeper flavor.
