Description

Irish Beef and Barley Soup made with tender beef, vegetables, and pearl barley simmered in rich broth.


Ingredients

Scale

1½ lbs beef stew meat

2 tbsp olive oil

1 onion, diced

2 carrots, sliced

2 celery stalks, chopped

3 cloves garlic, minced

½ cup pearl barley

6 cups beef broth

1 cup water

1 tbsp tomato paste

1 tsp dried thyme

1 bay leaf

1 tsp salt

½ tsp black pepper

2 tbsp parsley


Instructions

1. Season and brown beef.

2. Cook onion, carrots, and celery.

3. Add garlic and tomato paste.

4. Return beef and add barley and broth.

5. Simmer 60–75 minutes.

6. Remove bay leaf.

7. Stir in parsley and serve.

Notes

Rinse barley before cooking.

Simmer uncovered to thicken if needed.
