Description
Irish Coffee Chocolate Cupcakes with rich chocolate cake and smooth Irish cream frosting.
Ingredients
1 cup all-purpose flour
½ cup cocoa powder
1 tsp baking soda
¼ tsp salt
½ cup granulated sugar
½ cup brown sugar
1 egg
½ cup buttermilk
¼ cup vegetable oil
½ cup hot brewed coffee
1 tsp vanilla extract
1 cup butter, softened
3 cups powdered sugar
3 tbsp Baileys Irish Cream
1 tbsp heavy cream
½ tsp vanilla extract
Instructions
1. Preheat oven to 350°F.
2. Mix dry ingredients.
3. Whisk wet ingredients.
4. Combine and fill liners.
5. Bake 16–18 minutes.
6. Cool completely.
7. Beat butter.
8. Add powdered sugar.
9. Mix in Baileys and cream.
10. Pipe frosting.
Notes
Cool fully before frosting.
Refrigerate leftovers up to 3 days.
