Description

Korean Japchae Inspired Glass Noodle Salad with sweet potato glass noodles and savory sesame soy dressing.


Ingredients

8 oz Korean sweet potato glass noodles

1 cup julienned carrots

1 red bell pepper, thinly sliced

1 cup spinach

1 cup sliced mushrooms

3 green onions, sliced

1 tablespoon sesame seeds

Sesame Soy Dressing:

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon brown sugar

1 teaspoon grated garlic

1 teaspoon grated fresh ginger


Instructions

1. Soak glass noodles.

2. Boil noodles until tender.

3. Sautรฉ vegetables.

4. Whisk dressing ingredients.

5. Combine noodles and vegetables.

6. Toss with dressing.

7. Sprinkle sesame seeds and serve.

Notes

Serve warm or chilled.

Store refrigerated up to 3 days.
