Description

A heart-shaped Lemon Blueberry Valentine Cake bursting with citrus flavor and juicy berries, topped with creamy lemon frosting.


Ingredients

Scale

1 ½ cups flour

1 ½ tsp baking powder

¼ tsp baking soda

¼ tsp salt

½ cup butter

¾ cup sugar

2 eggs

½ cup sour cream

2 tbsp lemon juice

1 tbsp lemon zest

1 tsp vanilla

1 ½ cups blueberries (tossed with flour)

Frosting:

8 oz cream cheese

½ cup butter

2 cups powdered sugar

1 tsp vanilla

1 tsp lemon juice


Instructions

1. Preheat oven to 350°F (175°C). Grease heart-shaped pan.

2. Whisk dry ingredients in one bowl.

3. Cream butter and sugar; add eggs.

4. Mix in sour cream, lemon juice, zest, and vanilla.

5. Add dry ingredients and fold in blueberries.

6. Pour batter into pan; bake 28–32 minutes.

7. Cool completely before frosting.

8. Beat cream cheese, butter, sugar, vanilla, and lemon juice until smooth.

9. Frost and decorate with berries and sprinkles.

Notes

Store covered at room temperature for 2 days or refrigerate for longer freshness.

Use frozen blueberries straight from the freezer to prevent color bleeding.
