Lemon Garlic Shrimp with Zucchini Noodles that is light, fresh, and ready in 20 minutes.
Ingredients
1 pound large shrimp, peeled and deveined
3 medium zucchini, spiralized
3 tablespoons olive oil
3 cloves garlic, minced
Juice of 1 lemon
Zest of 1 lemon
1/2 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes
1/4 cup grated Parmesan cheese
Instructions
1. Heat olive oil in skillet.
2. Cook garlic briefly.
3. Add shrimp and cook until pink.
4. Stir in lemon juice and zest.
5. Remove shrimp and cook zucchini noodles briefly.
6. Return shrimp and toss together.
7. Top with Parmesan and serve.
Notes
Do not overcook shrimp.
Pat zucchini dry before cooking.
Serve immediately for best texture.
