Description
Lemon Herb Chicken with Asparagus is a fresh and healthy one-pan dinner made with juicy chicken breasts, garlic, herbs, and bright lemon.
Ingredients
4 boneless skinless chicken breasts
1 pound asparagus, trimmed
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon lemon zest
3 tablespoons lemon juice
1 tablespoon parsley
Instructions
1. Season chicken with salt, pepper, oregano, and thyme.
2. Heat olive oil and cook chicken 5-6 minutes per side.
3. Remove chicken and sautรฉ garlic.
4. Add asparagus and cook 4-5 minutes.
5. Return chicken to skillet and add lemon juice and zest.
6. Cook 2 more minutes and garnish with parsley before serving.
Notes
Store up to 4 days refrigerated.
Use chicken thighs if preferred.
Serve with rice or quinoa.
